I love a simple, yet flavorful, sugar cookie, and Snickerdoodles are cookies that fit that category perfectly. In fact, these cookies are so simple, they are my go to cookie for when I'm in the mood for something sweet. I will mix up a batch of cookies, roll them in the sugar and then freeze them in small batches for baking at a later date or when I need something to appease my grandchildren's sweet tooth when they are visiting. After all, these cookies pair well with hot cocoa and Christmas movies.

Description

A simple cinnamon sugar cookie that's quick and easy.

Ingredients
    Cookie Ingredients
  • 1 cup Softened Butter (I use salted)
  • 1 1/2 cup White Sugar
  • 2 ea Eggs
  • 2 3/4 cup All Purpose flour
  • 1/2 tsp Baking Powder
  • 1/2 tsp Salt
  • 1 tsp Vanilla Extract
  • Sugar Coating Ingredients
  • 1/3 cup sugar
  • 2 tsp ground cinnamon
Instructions
    1. Cream butter and sugar until fluffy.
    2. Add eggs and incorporate well.
    3. Add dry ingredients a third at a time until it comes together and there are no more dry spots. Be sure to scrape the side of the bowl as you mix.
    4. Add vanilla last and mix once more.
    5. Using a cookie scoop or a spoon, scoop up dough and roll in the sugar coating. Place on cookie sheet and slightly press down the cookie ball. These cookies do not spread much due to the baking powder, so pressing down insures that you get a nice consistent cookie after baking.
    6. Bake for 8-10 minutes in a 400 degree oven.
