Easy Peanut Butter Cookies

These peanut butter cookies are as easy as they come when it comes to baking. They are a 4 ingredient cookie (3 if you omit the vanilla extract) that takes no time to whip up and bake. In fact, it is so simple, you can even let your children bake these cookies.

The ingredients? Peanut butter, sugar, egg, and of course, a little vanilla.

Recently, I wrote about cooking these with my granddaughter. I had already planned to make cookies, but I didn't realize that she wanted to be so hands-on that I wouldn't even get a beautiful picture of the cookies. You'll have to read the post to understand.

Just know that these cookies are very forgiving. If you have an overly enthusiastic kitchen helper, just make sure that you cook for less time to avoid burnt and extra crispy cookies.

Ingredients
  • 1 cup Peanut Butter
  • 1 cup Sugar
  • 1 ea Large egg
  • 1/2 tsp vanilla extract (optional)
Instructions
  1. Place all ingredients in a bowl and mix until fully incorporated. Scoop dough balls onto ungreased cookie sheet. Place into a preheated 350 degree oven. Bake for 10 minutes, or until cookie is browned and set around the edges. Allow to cool on a cookie rack.
